Our client in a hospitality industry is urgently seeking to recruit the above position in Nairobi .

Head Chef Job Description.

  • Overseeing kitchen operations and being actively evolved with the physical cooking of dishes when service starts.
  • Developing and implementing menus according to property and brand standards, theoretical food cost and sales mix; including menu creation according to seasonal content and introduction of items appealing to global trends.
  • Ensuring that all Kitchen staff and trainees are familiar with the day’s requirements.
  • Ensuring that all communications between restaurant and kitchen run smoothly.
  • Ensuring that each dish leaving the Kitchen is checked for quality, quantity, presentation and correct temperature.
  • Ensuring that the dining room/ restaurant personnel are “standing by” when delicate dishes are served.
  • Appearance -Ensure that your uniform is clean when on duty and that you are wearing your name badge.
  • Ensure that you are dressed properly and maintain a high standard of personal hygiene.
  • To ensure that all employees adhere to these standards.

Fire, Hygiene, Health and Safety

  • Ensure that work practices are efficient, clean and hygienic
  • Ensure that all items of equipment are correctly cleaned and stored.
  • Ensure that assigned department is clean, constant rotation and
    cleaning procedures to be followed
  • Ensure that any defects on appliances and equipment are reported to Maintenance and followed up on.
  • Ensure that all employees of the assigned department have a good understanding of how to make use of all cleaning chemicals used in area of work, and how to safely and effectively apply this knowledge to be most productive.
  • Ensure adherence to the Hygiene and HACCP Standard Operating Procedures.
  • To have a complete understanding of and adhere to the hotel’s policy relating to Fire, Hygiene, Health and Safety
  • To ensure that all employees in the assigned department have a complete understanding of and adherence to the hotel’s policy relating to Fire, Hygiene, Health and Safety

Skills for Head chef Jobs in Kenya

  • Excellent creative and artistic flair and the confidence to establish new ideas and experiment with new concepts and new cooking methods.
  • Must work accurately under pressure.
  • People skills –tolerance, patience and caring at all times, but also able to take the necessary disciplinary action when standards are not met,and service is not provided within the F&B department.
  • Hosting skills –to promote our hospitality ethos within our lodge during meal service.
  • Excellent communication skills.
  • Excellent written and verbal skills.
  • Excellent attention to detail.
  • Excellent hygiene principles.
